Healthy(ish) Breakfast

I recently took a hint from my love handles and cut out my homemade bacon, egg and cheese biscuits from our weekend routine. Every now and then, not a big deal. Every single weekend, and suddenly I'm growing cottage cheese on the back of my thighs.

In an attempt to create a healthier, but just as delish, weekend breakfast feast, this weekend I swapped out the buttery biscuits {yummmm} for some fresh veggies, whole wheat wraps, egg whites and baked bacon. It turned out surprisingly awesome - husb thought so too! Always a plus :)

What you'll need:
Whole wheat wraps
Eggs
Tomato
Red & Green Peppers
Red Onion
American Cheese 
Baconnn

What to do:
Dice up about 1/4 of a red pepper, green pepper, tomato and red onion as little as you like them. I chopped up ours pretty finely. Set them aside.
 Depending on how many wraps you are making (I made 2) whisk up a bowl of 1/2 eggs and 1/2 egg whites. For 2 wraps, I used 3 whole eggs and 2 egg whites. Normally I'd add a splash of milk to this mix, but we ran out of regular milk... woops. And vanilla almond milk probably have been gross. Not a big deal, we didn't miss it.
 Before you start cooking the eggs, put a pan of bacon in the oven and bake at 350 while you cook your wraps. Usually it will get crispy in 15-20 minutes, but I'm a freak and like it nearly burnt so I leave it in til it looks like its reeeally crunchy!
 In a non-stick pan (or a pan sprayed with non-stick spray) pour in your egg mixture and veggies. Scramble it all up until it looks like scrambled eggs. Add a little salt and pepper - you could even add some garlic salt if you're into that. I did!
 Set your egg/veggie mixture aside for a minute. Before you add the filling to your wrap, put the wrap by itself in the microwave for about 10 seconds. This makes them soft and they will be less likely to rip when you fold up your breakfast burrito! Tricky tricky, I know. We used whole wheat wraps. This made me feel better about the whole meal haha...
 Scoop your yummy eggs/veggies onto the middle of your microwaved wrap. You can use whatever cheese you want, but I tear up a slice (or 2) of American and lay it on top of the hot egg/veggie mix and let it melt for a few seconds. Sometimes Andrew likes hot sauce in his breakfast burritos, but I'm not a fan so I left it out this weekend. Would have been good though, I'm sure!
 Fold up your wrap like you have seen them do at Chipotle a zillion times - you know, fold the sides in just a little first and then roll it up gently so it doesn't rip. Cut it in half, and it should look somethinggg like this:
 By now, your bacon should be smelling up your whole house and making your stomach growl. Since it will have been baking in a pool of grease, you'll prob want to let the pieces sit on a paper towel (and even dab it off with another one if you're being careful about your butt dimples) for a moment or two.
 After it has been somewhat de-greased, serve up your delish baked bacon on a plate with your healthy, nutritious, and ridiculously filling breakfast burrito!

Looks good, huh??? It was. If you make this for your husband - or anyone else for that matter - this weekend, he just might start calling you Martha. Or at least mine did :)

So there you have it. A healthy(ish) weekend breakfast that anyone will enjoy and appreciate! You'll be full and satisfied and ready for a long, lazy day of couch surfing and nap taking. Or for those of you who have more ambitious weekend plans than me... you won't be too stuffed to function, as you (read: I) tend to be after most hearty weekend breakfasts.

  1. Looks really tasty and healthy-ish (bacon really takes it in the opposite direction).
    One suggestion I can make is skip the American cheese or use cheddar instead. American cheese is too overprocecessed and doesn't have many benefits.

We try to stay away from processed food as much as possible, but the organic American cheese we buy it is better than most other American cheese options out there so in moderation we feel ok about eating it. We don't indulge in bacon all the time, but when we do we opt for organic hickory smoked bacon once a month or so and always get it from our local Farmer's Market.
